Labor Day Recipes

                For many people, Labor Day signals the end of summer. It’s the last holiday before fall, school is starting, the weather is cooling, and the days are getting darker earlier. If you are hosting or attending a Labor Day party, here are some unique recipe ideas you might want to try!

                A quick and easy corn dip is a great way to kick off any Labor Day cookout. Bright and cool, this hits the spot if the day is hot and humid. We love to serve this dip with corn chips, but it can be enjoyed with a variety of chips.

Corn Dip

  • 1 cup Sour Cream
  • 1 cup Mayonnaise
  • 1 cup Shredded Cheddar Cheese
  • 1 can Shoepeg Corn
  • Green Onion (to taste)
  • Pickled Jalapeños (to taste)
  • Corn Chips

Instructions: Chop green onions and jalapenos. Add all ingredients to a mixing bowl. Stir and chill overnight. Serve with your choice of corn chips.

               

        By the end of the summer, traditional cookout entrees like burgers and hot dogs might not hit the spot anymore. If you are looking to switch up your entrée, try these Southwest Chicken Sandwiches. Prep is as easy as cheeseburgers, but these are so much more flavorful.

Southwest Chicken Sandwiches

  • Chicken Breasts
  • Teriyaki Marinade
  • Sesame Buns
  • Whole Canned Green Chiles
  • American Cheese Slices
  • Iceberg Lettuce
  • Sliced Tomato
  • Sliced Red Onion
  • Southwest Sauce

Southwest Sauce:

  • ½ C Mayonnaise
  • ½ tsp Paprika
  • ½ tsp Cumin
  • 1/8 tsp Cayenne Pepper
  • 2 pinches of salt

Instructions: Marinate chicken breasts in teriyaki sauce for at least one hour.* Add all ingredients for the Southwest Sauce into a bowl. Mix and chill sauce until ready to use. Drain and dry green chiles and set aside. Grill marinated chicken breasts and buns. When chicken is almost done, add a slice of American cheese and a whole green chile to the top. Cook until cheese is melted. Assemble and enjoy!

*Note: We like to cut our chicken breasts in half to make them thinner.

               

      The best part of any cookout is the dessert and what better dessert to enjoy on a hot summer day than key lime pie. Tart and smooth, this key lime pie is sure to please everyone at the party. Don’t forget the whipped cream!

Key Lime Pie

  • 1 Graham Cracker Crust
  • 14 oz Sweetened Condensed Milk
  • 4 Egg Yolks
  • ½ cup Key Lime Juice
  • 1 tbs Grated Key Lime Zest

Instructions: Preheat your oven to 325 degrees. Put egg yolks into a bowl and whisk. Add sweetened condensed milk, lime juice, and zest. Stir well. Pour into crust and bake 15-17 minutes. Allow to cool completely and add whipped cream just before serving.
